Tortellini Soup

Ingredients

  • 2 (14 1/2 oz.) cans chicken broth
  • 1 (16 oz.) can whole tomatoes, undrained and chopped
  • 1 (16 oz.) can chickpeas, rinsed and drained
  • 2 medium garlic cloves, pressed
  • 1 tsp. dried bail, crushed
  • 1 (9oz.) pkg. refrigerated cheese tortellini, uncooked
  • 2 Tbsp. chopped fresh parsley
  • 2 Tbsp. grated Parmesan cheese

Directions

  1. Bring first 5 ingredients to a boil in a large saucepan. Stir in tortellini, and return to a boil. Reduce heat, and simmer 3 minutes. Stir in parsley, and sprinkle with Parmesan cheese. Serve immediately.
