Ingredients
- 16 oz can whole tomatoes, crushed
- 15 oz can black beans, rinsed and drained
- 1 1/2 cups uncooked converted long grain white rice
- 1 onion, chopped
- 1 cup cottage cheese
- 4 oz can chopped green chiles
- 3 tbsp vegetable oil
- 3 tsp minced garlic
- 2 cups grated Monterey Jack Cheese, divided
Directions

Combine tomatoes, beans, rice, onion, cottage cheese, chilies, oil, garlic and 1 cup cheese in crock pot.; mix thoroughly. Cover and cook on LOW 6-9 hrs.

Sprinkle with remaining cheese before serving.
