Arroz con Queso

Ingredients

  • 16 oz can whole tomatoes, crushed
  • 15 oz can black beans, rinsed and drained
  • 1 1/2 cups uncooked converted long grain white rice
  • 1 onion, chopped
  • 1 cup cottage cheese
  • 4 oz can chopped green chiles
  • 3 tbsp vegetable oil
  • 3 tsp minced garlic
  • 2 cups grated Monterey Jack Cheese, divided

Directions

  1. Combine tomatoes, beans, rice, onion, cottage cheese, chilies, oil, garlic and 1 cup cheese in crock pot.; mix thoroughly. Cover and cook on LOW 6-9 hrs.

  2. Sprinkle with remaining cheese before serving.
