Ingredients
- 1 lb chicken breasts, lightly pounded
- Kosher salt
- Black pepper
- 1 cup wild rice blend
- 10 garlic cloves, crushed
- 1/2 cup sun-dried tomatoes, packed in oil
- 1/2 cup capers, drained
- 2 cups water
- 1/2 cup fresh lemon juice
- 1/4 cup olive oil
Directions

Season chicken with salt and pepper. Place chicken in crock pot. Add rice, garlic, tomatoes and capers; stir well.

Mix water, lemon juice and oil in small bowl. Pour mixture over rice and chicken. Stir once to coat chicken. Cover and cook on LOW 8 hrs.
