Carrot-Pineapple Salad

Ingredients
- 1/2 cup raisins (soak 5 minutes in boiling water; drain)
- 1 can pineapple chunks, drained and cut into small pieces, juice reserved
- 2 cups coarsely grated carrots
- 1/2 cup salad dressing of your choice
Directions
- Combine the raisins, pineapple chunks and carrots. Whisk some of the reserved pineapple juice into the salad dressing to thin to desired consistency. Toss pineapple mixture with dressing. Refrigerate until ready to serve.
