Charletta’s Potato Salad

Ingredients
- 4 large baking potatoes
- 1/4 cup mayonnaise
- 2 Tbsp. Dijon mustard
- 2 hard-cooked eggs, chopped
- 2 tsp. sugar
- 3 Tbsp. diced green bell pepper
- 3 Tbsp. diced celery
- 3 Tbsp. diced onion
- 2 Tbsp. sweet pickle relish
- 2 Tbsp. chopped fresh parsley
- 2 tsp. paprika
- 1/2 tsp. salt
- 1/2 tsp. pepper
Directions
- Peel baking potatoes, and cut into 1-inch cubes. Cook in boiling water to cover in a Dutch oven 25 minutes or until tender; drain and cool.
- Stir together potato and remaining ingredients; cover and chill.
