Charletta’s Potato Salad

Ingredients

  • 4 large baking potatoes
  • 1/4 cup mayonnaise
  • 2 Tbsp. Dijon mustard
  • 2 hard-cooked eggs, chopped
  • 2 tsp. sugar
  • 3 Tbsp. diced green bell pepper
  • 3 Tbsp. diced celery
  • 3 Tbsp. diced onion
  • 2 Tbsp. sweet pickle relish
  • 2 Tbsp. chopped fresh parsley
  • 2 tsp. paprika
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Directions

  1. Peel baking potatoes, and cut into 1-inch cubes. Cook in boiling water to cover in a Dutch oven 25 minutes or until tender; drain and cool.
  2. Stir together potato and remaining ingredients; cover and chill.
