Crispy Asian Slaw

Ingredients

  • 1 (3 oz.) pkg. ramen noodle soup mix
  • 1 Tbsp. sesame seeds
  • 2 lbs. napa cabbage
  • 1 small carrot
  • 4 oz. fresh snow pea pods
  • Sesame- Soy Vinaigrette:
  • 1/4 cup rice vinegar
  • 1/4 cup dark sesame oil
  • 3 Tsp. chunky peanut butter
  • 2 Tbsp. lime juice
  • 1 Tbsp. honey
  • 1 tsp. grated fresh ginger
  • 1/4 tsp. dried crushed red pepper

Directions

  1. Remove flavor packet from soup mix and reserve for another use; crumble noodles. Place noodles and sesame seeds on a baking sheet.
  2. Bake at 350 degrees, stirring occasionally, 4 to 5 minutes or until toasted.
  3. Cut cabbage, carrot, and snow peas into thin strips; place in a bowl. Drizzle with Sesame- Soy Vinaigrette, tossing gently to coat. Sprinkle with noodles and sesame seeds.
  4. For vinaigrette: Whisk together all ingredients.
