Crispy Asian Slaw

Ingredients
- 1 (3 oz.) pkg. ramen noodle soup mix
- 1 Tbsp. sesame seeds
- 2 lbs. napa cabbage
- 1 small carrot
- 4 oz. fresh snow pea pods
- Sesame- Soy Vinaigrette:
- 1/4 cup rice vinegar
- 1/4 cup dark sesame oil
- 3 Tsp. chunky peanut butter
- 2 Tbsp. lime juice
- 1 Tbsp. honey
- 1 tsp. grated fresh ginger
- 1/4 tsp. dried crushed red pepper
Directions
- Remove flavor packet from soup mix and reserve for another use; crumble noodles. Place noodles and sesame seeds on a baking sheet.
- Bake at 350 degrees, stirring occasionally, 4 to 5 minutes or until toasted.
- Cut cabbage, carrot, and snow peas into thin strips; place in a bowl. Drizzle with Sesame- Soy Vinaigrette, tossing gently to coat. Sprinkle with noodles and sesame seeds.
