Marinated Garden Salad

Ingredients
- 3 medium tomatoes
- 1 green bell pepper
- 1 small purple onion
- 1 medium cucumber
- 1 cup Kalamata olives
- 1/4 cup olive oil
- 2 Tbsp. red wine vinegar
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. dried oregano
- 2 (4oz.) pkg. crumbles feta cheese
- 1 (2oz.) can anchovies, drained (optional)
- lettuce leaves (optional)
Directions
- Cut each tomato into 8 wedges. Slice bell pepper and onion into rings. Peel and slice cucumber. Combine tomato, bell pepper, onion, cucumber, and olives.
- Whisk together oil and next 4 ingredients; drizzle over vegetables, and toss. Serve immediately, or cover and chill 1 hour. Sprinkle with cheese; top with anchovies, if desired. Serve on lettuce leaves, if desired.
