Minted Vegetable Salad

Ingredients

  • 2 large tomatoes, chopped
  • 1 medium-size red bell pepper, chopped
  • 1 bunch green onions, sliced
  • 1 cup chopped fresh parsley
  • 1/3 cup chopped fresh mint
  • 1/2 cup chopped radishes
  • 1/3 cup sliced ripe olives
  • 1 garlic clove, pressed
  • 2 Tbsp. olive oil
  • 1/4 cup lemon juice
  • 1/2 tsp. pepper
  • Lettuce leaves

Directions

  1. Combine first 12 ingredients in a bowl; cover and chill at least 1 hour or overnight. Serve on lettuce leaves.
