Oregano-Feta Dressing

Ingredients

  • 3 oz. reduced-fat cheese, crumbled*
  • 1/4 cup nonfat buttermilk
  • 3 Tbsp. fresh lemon juice
  • 1 garlic clove
  • 1/2 tsp. dried oregano*
  • 1/4 tsp. freshly ground pepper
  • 2 Tbsp. water
  • 2 Tbsp. olive oil
  • 3/4 small green bell pepper, chopped

Directions

  1. Process first 7 ingredients in a food processor until smooth. Gradually add oil in a steady stream, processing until smooth. Add bell pepper, and pulse 3 seconds.
  2. makes about 1 cup

  3. 3 oz. crumbled feta cheese may be substituted for reduced-fat cheese, 1 tsp. chopped fresh oregano may be substituted for dried.
