Ingredients
- 2 1/2 lbs baby octopus
- 1 turkish or 1/2 californian bay leaf
- 1/3 cup olive oil
- 2 tbsp fresh lemon juice
- 1 tsp coarse salt
- 1/2 tsp black pepper
- 1 tbsp chopped fresh oregano
Directions

Rinse octopus in cold water and cover by 2" water in a pot. bring to boil with bay leave, reduce heat and simmer until tender. Strain in colander. When cool cut off and discard heads and halve lengthwise. Cool to room temp. Whisk remaining ingredients and marniate for 20 min at room temp. Serve immediately.
