Ingredients
- 2 zucchini
- 2 yellow squash
- 1 large red bell pepper, chopped
- 1 medium purple onion, chopped
- 8 cups cooked long-grain rice
- 3/4 cup mayonnaise
- 1/3 cup buttermilk
- 2 Tbsp. Dijon mustard
- 2 Tbsp. white vinegar
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
Directions
- Cut zucchini and yellow squash in half lengthwise; cut into slices.
- Stir together vegetables, rice, and remaining ingredients; cover and chill 8 hours.
