Rustic Cheddar Mashed Potatoes

Ingredients

  • 2 lbs russet potatoes, peeled and diced
  • 1 cup water
  • 1/3 cup butter, cut into small pieces
  • 1/2 to 3/4 cup milk
  • 1 1/4 tsp salt
  • 1/2 to 3/4 cup shredded Cheddar
  • 1/2 tsp black pepper
  • 1/2 cup chopped green onions

Directions

  1. Combine potatoes and water in crock pot; dot with butter. Cover and cook on LOW for 6 hrs. Transfer potatoes to large mixing bowl.

  2. Beat potatoes with mixer until blended. Add milk, salt and pepper. Beat until blended.

  3. Stir in green onions and cheese; cover. Let stand 15 minutes.
