Chicken Provencal

Ingredients

  • 2 lbs chicken breasts, cut into quarters
  • 2 medium red peppers, cut into slices
  • 1 medium yellow pepper, sliced
  • 1 onion, sliced
  • 28 oz can whole plum tomatoes, drained
  • 3 cloves garlic, minced
  • 1/4 tsp thyme
  • 3 strips orange peel
  • 1/4 tsp salt
  • 1/4 tsp fennel seeds
  • 1/2 cup chopped basil

Directions

  1. Place chicken, peppers, onion, tomatoes, garlic, salt, thyme, fennel and orange peel in crock pot. Mix thoroughly.

  2. Cover and cook on LOW 7-9 hrs. Sprinkle with basil.


  3. Serve with French baguette and vegetables***
