Ingredients
- 1/2 lb raw chorizo, removed from casings
- 10.75 oz can condensed cream of chicken
- 14 oz can chicken broth
- 6 oz box corn bread stuffing mix
- 1 cup chopped onions
- 1 cup diced, red pepper
- 1 cup chopped celery
- 3 large eggs, beaten
- 1 cup frozen corn

Lightly spray inside of crock pot with cooking spray.

Cook chorizo in a large skillet over medium-high until browned. Transfer to crock pot with slotted spoon and return skillet to heat.

Whisk cream of chicken soup and chicken broth into drippings in skillet. Add remaining ingredients and stir until blended. Stir into crock pot. Cover and cook on LOW 7 hrs.
