Bacon-Wrapped Fingerling Potatoes with Thyme

Ingredients

  • 1 lb fingerling potatoes
  • 2 tbsp olive oil
  • 1 tbsp minced thyme
  • black pepper
  • 1/4 tsp paprika
  • 1/2 lb bacon strips
  • 1/4 cup chicken broth

Directions

  1. Toss potatoes with oil, thyme, pepper and paprika in a large bowl.

  2. Cut each bacon slice in half lengthwise, wrap half slice bacon tightly around each potato.

  3. Heat large skillet over medium; add potatoes. Reduce heat to medium-low; cook until lightly browned and bacon has tightened around potatoes.

  4. Place potatoes in crock pot. Add broth. Cover and cook on HIGH 3 hrs.
