Ingredients
- 1 lb fingerling potatoes
- 2 tbsp olive oil
- 1 tbsp minced thyme
- black pepper
- 1/4 tsp paprika
- 1/2 lb bacon strips
- 1/4 cup chicken broth
Directions

Toss potatoes with oil, thyme, pepper and paprika in a large bowl.

Cut each bacon slice in half lengthwise, wrap half slice bacon tightly around each potato.

Heat large skillet over medium; add potatoes. Reduce heat to medium-low; cook until lightly browned and bacon has tightened around potatoes.

Place potatoes in crock pot. Add broth. Cover and cook on HIGH 3 hrs.
