Easy Tiramisu

Ingredients

  • 1 (16 oz.) pkg. mascarpone cheese
  • 1 1/4 cups whipping cream
  • 1/4 cup powdered sugar
  • 1 1/2 tsp. vanilla extract
  • 1 cup brewed espresso
  • 2 Tbsp. dark run
  • 2 (3oz.) pkg. ladyfingers
  • 4 (1-oz.) bittersweet chocolate squares, grated

Directions

  1. Beat first 4 ingredients at high speed with an electric mixer 30 seconds or just until blended.
  2. Stir together espresso and rum.
  3. Arrange 1 pkg. ladyfingers in bottom of a 3-quart bowl or trifle dish;; brush with half of espresso mixture.
  4. Layer half of mascarpone cheese mixture over ladyfingers; sprinkle with half of grated chocolate. Repeat layers. Cover and chill 8 hours.
