Occasional Chipotle Goat Cheese Dip

Ingredients

  • 1 lb. fresh Chevre (goat cheese)
  • 4 Tbsp. unsalted butter, soft
  • 1/3 cup crème fraiche or sour cream
  • 1 Tbsp. fresh lemon juice
  • 2 Tbsp. mashed, canned chipotle chilies in adobo sauce, plus 1 tsp. adobo sauce
  • 3 Tbsp. finely chopped cilantro (plus whole leaves for garnish)
  • Salt and freshly ground black pepper
  • Tortilla chips

Directions

  1. Combine chevre, butter, crème fraiche, lemon juice, chiles and adobo sauce in food processor until smooth. Add chopped cilantro;
  2. pulse to combine. Move mixture to bowl; stir in salt and pepper to taste. Refrigerate at least an hour. Garnish with cilantro leaves and sere with tortilla chips.
