Ingredients
- 1 lb. fresh Chevre (goat cheese)
- 4 Tbsp. unsalted butter, soft
- 1/3 cup crème fraiche or sour cream
- 1 Tbsp. fresh lemon juice
- 2 Tbsp. mashed, canned chipotle chilies in adobo sauce, plus 1 tsp. adobo sauce
- 3 Tbsp. finely chopped cilantro (plus whole leaves for garnish)
- Salt and freshly ground black pepper
- Tortilla chips
Directions
- Combine chevre, butter, crème fraiche, lemon juice, chiles and adobo sauce in food processor until smooth. Add chopped cilantro;

pulse to combine. Move mixture to bowl; stir in salt and pepper to taste. Refrigerate at least an hour. Garnish with cilantro leaves and sere with tortilla chips.
