Linda’s Buttermilk Cake

Ingredients

  • 2 cups sifted cake flour
  • 3/4 tsp. Arm & Hammer baking soda
  • 1/2 tsp. salt
  • 2/3 cup shortening
  • 1 cup sugar
  • 3 eggs, separated
  • 1 tsp. vanilla
  • 1/2 tsp. lemon extract
  • 1/2 cup buttermilk
  • 2 Tbsp. vinegar

Directions

  1. Sift flour, baking sod and salt together.
  2. Cream shortening; add sugar gradually, creaming until light and fluffy.
  3. Add egg yolks; beat until very light.
  4. Add vanilla and lemon extract; blend well.
  5. Add dry ingredients alternately with combined buttermilk and vinegar.
  6. Beat until batter is smooth.
  7. Fold into greased 7 × 20 × 2-inch loaf pan or 2 8-inch layer cake pans, 1 1/2 inches deep.
  8. Bake loaf at 350 degrees 40 to 45 minutes; layers at 375 degrees 25 to 30 minutes.
  9. Frost with Orange Frosting (see recipe).
  10. makes 1 7×10×2-inch loaf cake or 2 8-inch layers, 1 1/ 2-inch deep
