Fried Shrimp or Fish

This is really good and extra crunchy!
Panko is a Oriental bread crumb and can be found in that section of your grocery.
I will say that some fish works well with Panko…some just needs good old fashioned cornmeal coating recipe found in this book.

Ingredients
- 1 egg beaten
- 1 cup milk
- 1 cup flour
- 1 cup Panko
- seasonings to taste...use salt, pepper or even a dash of "Tony's" a Cajun/Creole seasoning.
Directions

Mix the egg and milk together.

Mix in a little salt or Tony’s seasoning into the flour.

Dip shrimp or fish filet into the flour.

Dip into egg wash.

Dip into the Panko.

TIP: Not necessary…but if you allow the shrimp or fish to “rest” a little before dropping into the hot oil the breading will stick better.

Drop into hot oil to fry until golden for shrimp.

For fish you can fry in an old cast iron skillet using just enough grease to come up to the side of the fish but not going over.

Serve with Red Cocktail Sauce and/or Tarter sauce, recipes also in this book.
