Kale, Olive Oil and Parmesan Soup

Ingredients

  • 2 tbsp olive oil
  • salt and pepper
  • 1 small Spanish onion, thinly sliced
  • 2 lbs kale, chopped
  • 3 garlic cloves
  • 8 cups chicken broth
  • Grated parmesan

Directions

  1. Heat oil in a large, heavy skillet over medium-high. Add onion and garlic; season with salt and pepper. Cook 4-5 minutes or until onion begins to soften. Add kale, cook and stir 2-4 minutes. Remove from heat and reserve in fridge, until needed.

  2. Pour broth into crock pot. Cover and cook on LOW 6 hrs.

  3. Add kale mixture and cook 15-20 minutes.

  4. Spoon soup into individual bowls, sprinkle with parmesan cheese and drizzle with olive oil.
