Champagne Poached Peaches

Ingredients

  • 4 cups champagne (flat or bubbly) or good dry white wine
  • 1/4 cup framboise (raspberry-flavored liqueur)
  • 1 1/2 cups sugar
  • 1/2 tsp. vanilla
  • 12 small, firm ripe peaches
  • whipped cream

Directions

  1. In a large saucepan, combine first 4 ingredients and bring to boil. Cook 10 minutes, stirring occasionally. Reduce heat; add peaches and poach 5 to 10 minutes, stirring occasionally. Reduce heat; add peaches and poach 5 to 10 minutes until tender, but not soft, turning peaches in liquid , once or twice. Remove from heat; let sleep in liquid at least one hour to absorb flavors. Serve with whipped cream, flavored with 1/2 tsp. vanilla extract and sugar to taste. Serve at room temperature or chilled.
