Swiss Breakfasr Crepes

Ingredients

  • 8 eggs
  • 1/3 cup milk or cream
  • dash of salt
  • dash of pepper
  • 1/2 lb. cooked ham, diced
  • 1 Tbsp. butter or margarine
  • 8 crepes
  • 8 thin slices Swiss cheese

Directions

  1. Preheat oven to 350 degrees. Combine eggs with milk or cream; beat well. Add salt, pepper and ham. In a skillet, scramble eggs in melted butter. Spoon eggs onto center of crepes; roll sides over eggs. Place crepes seam-side down in greased 9x 13-inch baking dish. Top each with a slice of cheese. Bake, 10 minutes or until cheese and crepes are heated through.
