South-of-the-Border Mac & Cheese

Ingredients

  • 5 cups cooked rotini
  • 14 oz can diced green chiles
  • 2 cups cubed American cheese
  • 12 oz can evaporated milk
  • 2 tsp chili powder
  • 4 oz cubed Sharp Cheddar
  • 2 medium tomatoes, chopped
  • 5 green onions, sliced

Directions

  1. Combine pasta, cheeses, milk, chiles and chili powder; mix well. Cover and cook on HIGH 2 hrs. Stir occasionally.

  2. Stir in tomatoes and green onions; cook until heated through.
