Tex Mex Pizza

Ingredients

  • 2 Tbsp. butter
  • 1/2 cup onion, chopped
  • 1/2 cup pepper, chopped
  • 1 can (15oz.) chili with no beans
  • 1 can (4 oz.) green chilies, chopped
  • 2 cups frozen whole kernel corn
  • 1 can (2 1.2 oz.) ripe olives, sliced
  • 1 cup corn chips, crushed
  • dash of cumin
  • 1/2 cup processed cheese, cubed
  • 1 (10 to 12 inch) soft flour or corn tortilla
  • 1/4 cup Cheddar cheese, shredded

Directions

  1. Place first three ingredients in an 8 cup glass measure and cook on high power 1 1/2 to 2 minutes. Add next seven ingredients. Mix well and cook on high power 4 minutes.
  2. Place tortilla on a microwave-safe plate. Spread mixture over tortilla. Top with cheese. Cook on high 2 to 3 minutes.
