Ingredients
- 2 Tbsp. butter
- 1/2 cup onion, chopped
- 1/2 cup pepper, chopped
- 1 can (15oz.) chili with no beans
- 1 can (4 oz.) green chilies, chopped
- 2 cups frozen whole kernel corn
- 1 can (2 1.2 oz.) ripe olives, sliced
- 1 cup corn chips, crushed
- dash of cumin
- 1/2 cup processed cheese, cubed
- 1 (10 to 12 inch) soft flour or corn tortilla
- 1/4 cup Cheddar cheese, shredded
Directions
- Place first three ingredients in an 8 cup glass measure and cook on high power 1 1/2 to 2 minutes. Add next seven ingredients. Mix well and cook on high power 4 minutes.
- Place tortilla on a microwave-safe plate. Spread mixture over tortilla. Top with cheese. Cook on high 2 to 3 minutes.
