Ingredients
- 15 oz can black beans
- 1 tbsp + 1 tsp olive oil
- 10 oz can diced tomatoes with mild green chiles, drained
- 12 oz chicken breasts
- 1 1/2 tsp chili powder
- 12 crisp corn taco shells
- 3/4 tsp ground cumin
- Toppings: lettuce, tomatoes, cheese, sour cream
Directions

Coat crock pot with nonstick spray. Add beans and tomatoes with chiles. Blend chili powder, cumin and 1 tsp oil in small bowl; rub onto chicken. Place chicken in crock pot. Cover and cook on HIGH 1.75 hrs.

Remove chicken and slice. Transfer bean mixture to bowl using slotted spoon. Stir in remaining 1 tbsp oil.

To serve, warm taco shells. Fill with equal amounts of beans and chicken.
