Boneless Pork Roast with Garlic

Ingredients

  • 2 1/2 lb boneless pork rib roast, rinsed and patted dry
  • 1/4 cup chopped rosemary
  • salt and pepper
  • 3 tbsp olive oil
  • 1/2 lemon, cut into slices
  • 4 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1/4 cup dry white wine

Directions

  1. Season pork roast with salt and pepper. Combine 2 tbsp oil, garlic, and rosemary in small bowl. Rub over pork. Roll and tie pork snugly with kitchen string. Tuck lemon slices under string and into ends of roast.

  2. Heat remaining 1 tbsp of oil in skillet over medium. Brown pork on all sides and transfer to crock pot.

  3. Return skillet to heat. Add broth and wine. Pour over pork. Cover and cook on LOW 8-9 hrs.

  4. Remove roast to cutting board. Cover with foil and let stand 10-15 minutes. Pour juice over pork.
