Broccoli Mousselines

Ingredients

  • 1 bunch broccoli
  • 1/2 pint whipping cream
  • 1/2 cup Parmesan Cheese
  • 2 eggs
  • salt to taste
  • pepper to taste
  • nutmeg to taste

Directions

  1. Trim broccoli into florets with 1-inch stems. Peel stalks, removing all of the tough outer covering, and cut into half-inch pieces.
  2. Place broccoli in a 2-quart dish, cover securely. Cook on high 5 minutes. Drain off all water; place broccoli in food processor or blender. Add other ingredients; blend well. Pour half of mixture into 6 double-lined paper muffin liners placed in microwave muffin pan. Cover with waxed paper; cook in microwave on medium-high power 5 to 6 minutes. Rotate pan midway through cooking. Remove from pan when done, repeat with remaining mixture.
