Ingredients
- 16 oz cottage cheese
- 2- 10 oz packages frozen chopped spinach, thawed
- 1/2 cup egg substitute
- 4 1/2 tbsp grated parmesan
- 1/3 cup sliced green onions
- 1 tbsp lemon juice
- 10 oz package frozen artichoke hearts, thawed
- 1/8 tsp ground nutmeg
- 1/8 tsp black pepper
Directions

Add cottage cheese, egg substitute, 3 tbsp parmesan, lemon juice, nutmeg and pepper to food processor; process until smooth.

Coat inside of crock pot with cooking spray. Combine spinach, cottage cheese mixture and green onions in large bowl. Spread half of mixture in crock pot.

Pat artichoke halves dry with paper towels. Place in single layer over spinach mixture. Sprinkle with remaining parmesan. Cover with remaining spinach mixture. Cover with lid slightly ajar and cook on LOW 3-3 1/2 hrs.
