Microwave Apple Jam

Ingredients
- 2 cups McIntosh apples, cored, peeled and cut in chunks
- 1 cup sugar
- 1 tsp. lemon juice
Directions
- Place apples in deep 2-quart microwave-safe bowl. Add sugar. Do not stir. Cook uncovered in microwave on high 5 to 8 minutes. Beat with electric mixer to blend well. Cook 4 minutes more. Remove from oven and stir in lemon juice. Let stand 5 minutes. Skim off any foam. Test for jelling. Pour into sterilized half-pint jar. Adjust lid. Store in refrigerator and use within 3 weeks.
