Apricot Oatmeal Bars

Ingredients
- Crumb Mixture:
- 1 1/2 cups flour
- 1 1/4 cups quick cooking oats
- 1/2 cup sugar
- 3/4 cup butter, melted
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 tsp. vanilla
- Filling:
- 10 oz. jar apricot preserves
- 1/2 cup flaked coconut
Directions
- Heat oven to 350 degrees.
- In a large mixer bowl combine all crumb mixture ingredients. eat at low speed, scraping bowl often, until mixture is crumbly (1 to 2 minutes).
- Reserve 1 cup crumb mixture; press remaining crumb mixture into greased 9 × 13-inch pan. Spread apricot preserves to within one half inch from edge of crumb mixture and coconut. Bake for 22 to 27 minutes or until edges are lightly browned.
