Herbed Potato Wedges

Ingredients

  • potatoes 2-12oz cut into wedges
  • olive oil 1 1/2 T
  • kosher salt 1/2 t
  • thyme 1/2 t
  • marjoram 1/4 t
  • tarragon 1/4 t
  • rosemary 1/4 t
  • pepper 1/4 t
  • parsley - optional

Directions

  1. Toss all ingredients in a plastic bag or bowl. Place wedges on a jelly roll pan. Bake at 400 for 50 minutes. Turn once during cooking.
