White Chocolate Tropical Macaroons

Ingredients

  • 4 oz. white chocolate, coarsely chopped
  • 1 cup sugar
  • 1/4 tsp. ground ginger
  • 1/4 tsp. ground cinnamon
  • 4 egg whites
  • 2 cups flaked coconut
  • 1 cup finely chopped dried pineapple
  • 1/2 cup finely chopped macadamia nuts*

Directions

  1. Microwave chopped white chocolate in a small glass bowl at high 1 1/2 minutes or until melted, stirring once. Set aside.
  2. Stir together sugar, ground ginger, and cinnamon.
  3. Beat egg whites at high speed with an electric mixer until foamy. Add sugar mixture, 1 Tbsp. at a time, beating until stiff peaks form and sugar dissolves (2 to 4 minutes).
  4. Fold in white chocolate, coconut, pineapple, and macadamia nuts. Drop mixture by rounded tablespoons 2 inches apart onto parchment [paper-lined baking sheets.
  5. Bake at 350 degrees for 13 to 17 minutes or until edge begins to brown. Remove to wire racks to cool. Store in an airtight container.
