White Chocolate Tropical Macaroons

Ingredients
- 4 oz. white chocolate, coarsely chopped
- 1 cup sugar
- 1/4 tsp. ground ginger
- 1/4 tsp. ground cinnamon
- 4 egg whites
- 2 cups flaked coconut
- 1 cup finely chopped dried pineapple
- 1/2 cup finely chopped macadamia nuts*
Directions
- Microwave chopped white chocolate in a small glass bowl at high 1 1/2 minutes or until melted, stirring once. Set aside.
- Stir together sugar, ground ginger, and cinnamon.
- Beat egg whites at high speed with an electric mixer until foamy. Add sugar mixture, 1 Tbsp. at a time, beating until stiff peaks form and sugar dissolves (2 to 4 minutes).
- Fold in white chocolate, coconut, pineapple, and macadamia nuts. Drop mixture by rounded tablespoons 2 inches apart onto parchment [paper-lined baking sheets.
- Bake at 350 degrees for 13 to 17 minutes or until edge begins to brown. Remove to wire racks to cool. Store in an airtight container.
