Ingredients
- 1 cup butterscotch flavored chips
- 1 cup Land O' Lakes butter, softened
- 3 cups all-purpose flour
- 1/2 cup firmly packed brown sugar
- 1/2 cup sugar
- 1 egg
- 2 Tbsp. milk
- 2 tsp. vanilla
- Frosting:
- 2 cups powdered sugar
- 1/4 cup Land O' Lakes butter, softened
- 1 to 2 Tbsp. milk
- 1 tsp. vanilla
Directions
- In 1-quart saucepan melt butterscotch chips over low heat. stirring constantly, until smooth (3 to 5 minutes).
- Pour into large mixing bowl; add remaining cookie ingredients. Beat at low speed, scraping bowl often, until well mixed (1 to 2 minutes).
- Divide dough in half; wrap in plastic food wrap. Refrigerate until firm (1 hour).
- Heat oven to 375 degrees.
- On lightly floured surface roll out dough, half at a time, to 1/8-inch thickness. Cut with 2 1/2-inch cookie cutters. Place 1-inch apart on cookie sheets. Bake for 5 to 8 minutes or until edges are lightly browned. Cool completely.
- In small mixer bowl combine all frosting ingredients. Beat at low speed, scraping bowl often, until fluffy (1 to 2 minutes). If desired, color frosting with food coloring. Frost and decorate cookies as desired.
