Watermelon Granita

Ingredients

  • 6 cups peeled, seeded, and cubed watermelon
  • 1/4 to 1/2 cup sugar
  • 2 1/2 Tbsp. lemon juice

Directions

  1. Process watermelon in a blender or food processor until smooth (about 4 cups puree). Pour into a bowl; add sugar and lemon juice, stirring until sugar dissolves. Cover and chill.
  2. Pour mixture into a 13 × 9-inch pan, and freeze, stirring occasionally, 3 hours or until firm.
  3. Scoop frozen mixture into balls using a large ice-cream scoop, and serve in paper snow cone cups or dessert dished.
