Ingredients
- 1 (14oz.) can vegetable broth
- 3/4 cup water
- 1 (6oz.) pkg. long-grain and wild rice mix
- 3 Tbsp. chopped walnuts
- Vegetable cooking spray
- 1/2 medium-sixe red bell pepper, chopped
- 1 cup sliced mushrooms
- 1 garlic clove, minced
- 3 green onions, sliced
- 1/4 tsp. salt
- 1/2 tsp. freshly ground pepper
Directions
- Bring broth and 1/4 cup water to a boil in a medium saucepan; add rice mix, discarding seasoning packet. Cover, reduce heat, and simmer 30 minutes.
- Saute walnuts in a large nonstick skillet coated with cooking spray over medium-high heat 5 minutes. Remover from pan; set aside. Add bell pepper, mushrooms, and garlic to skillet coated with cooking spray; sauté over medium-high heat 5 minutes or until tender.
- Stir in cooked rice, green onions, salt, and pepper; sprinkle with walnuts. Serve Immediately.
