Turkey, Carrot and Mushroo Meat Loaf

Ingredients

  • 2 large eggs
  • 2 Tbsp. Dijon mustard
  • 1 Tbsp. fresh thyme leaves
  • Kosher salt and pepper
  • 2 slice whole-wheat sandwich bread, torn into small pieces
  • 8 oz. mushrooms, thinly sliced
  • 4 scallions, thinly sliced
  • 1 medium carrot, grated
  • 1 1/2 lb. ground turkey

Directions

  1. Heat oven to 375 degrees. Line a rimmed baking sheet with foil.
  2. In a large bowl, whisk together the eggs, mustard, thyme, 1/4 tsp. salt and 1/2 tsp. pepper; stir in the bread. Add the mushrooms, scallions and carrot, and mix to combine (some of the mushrooms will break).
  3. Add the turkey and mix prepared baking sheet and shape into a 9 × 3 1/2-inch loaf. Bake until the internal temperature registers 160 degrees, 40 to 45 minutes. Let rest for 5 minutes before slicing.
