Mint Syrup

Ingredients

  • 2 cups packed fresh mint
  • 3/4 cup simple syrup

Directions

  1. Prepare an ice water bath; set aside.

  2. Bring a saucepan of water to a boil; add mint.

  3. Cook until bright green and wilted, 3 to 5 seconds.

  4. Plunge into ice water bath; drain.

  5. Blend syrup and mint in a blender until smooth; let stand 10 minutes.

  6. Pour through a fine sieve into a bowl; discard solids.

  7. Refrigerate, covered, up to a day.
