Ingredients
- 2 cups packed fresh mint
- 3/4 cup simple syrup
Directions

Prepare an ice water bath; set aside.

Bring a saucepan of water to a boil; add mint.

Cook until bright green and wilted, 3 to 5 seconds.

Plunge into ice water bath; drain.

Blend syrup and mint in a blender until smooth; let stand 10 minutes.

Pour through a fine sieve into a bowl; discard solids.

Refrigerate, covered, up to a day.
