Tomato Marmalade

Ingredients
- 1 medium onion, finely chopped
- 1 Tbsp. olive oil
- 4 large tomatoes, peeled and finely chopped
- 2 garlic cloves, minced
- 3 Tbsp. minced fresh basil *
- 1/2 tsp. salt
- 1/2 to 1 tsp. fennel seeds
- 1/4 tsp. pepper
Directions
- Saute onion in hot oil in a Dutch oven over medium-high heat until tender. Remove from heat, and stir in tomato and remaining ingredients.
- Bake, covered, at 400 degrees for 1 hour or until thick and bubbly, stirring occasionally. Serve with grilled meat or crab cakes.
