Tomato Marmalade

Ingredients

  • 1 medium onion, finely chopped
  • 1 Tbsp. olive oil
  • 4 large tomatoes, peeled and finely chopped
  • 2 garlic cloves, minced
  • 3 Tbsp. minced fresh basil *
  • 1/2 tsp. salt
  • 1/2 to 1 tsp. fennel seeds
  • 1/4 tsp. pepper

Directions

  1. Saute onion in hot oil in a Dutch oven over medium-high heat until tender. Remove from heat, and stir in tomato and remaining ingredients.
  2. Bake, covered, at 400 degrees for 1 hour or until thick and bubbly, stirring occasionally. Serve with grilled meat or crab cakes.
  3. makes 1 1/2 cups

    • 2 tsp. dried basil may be substituted for fresh basil.
