Ingredients
- 1 (10 oz.) pkg. frozen corn with butter sauce
- 1 (14 1/4oz.) can drained salmon
- 2 cups leftover mashed potatoes
- 1 cup milk
- 1/2 cup chopped red bell pepper
- 1 Tbsp. fresh lemon juice
- Garnish: chopped fresh parsley
Directions
- Cook frozen corn and butter sauce according to package directions.
- In a large bowl, combine the cooked corn mixture, salmon, mashed potatoes, milk and chopped red bell pepper.
- Microwave on high for 3 to 4 minutes or until hot. Mix well, stir in lemon juice.
- ladle into bowls and garnish with parsley.
