Salmon Chowder

Ingredients

  • 1 (10 oz.) pkg. frozen corn with butter sauce
  • 1 (14 1/4oz.) can drained salmon
  • 2 cups leftover mashed potatoes
  • 1 cup milk
  • 1/2 cup chopped red bell pepper
  • 1 Tbsp. fresh lemon juice
  • Garnish: chopped fresh parsley

Directions

  1. Cook frozen corn and butter sauce according to package directions.
  2. In a large bowl, combine the cooked corn mixture, salmon, mashed potatoes, milk and chopped red bell pepper.
  3. Microwave on high for 3 to 4 minutes or until hot. Mix well, stir in lemon juice.
  4. ladle into bowls and garnish with parsley.
