Salmon with Cranberry-Mustard Sauce

Ingredients
- olive oil spray
- 2 (8oz.) salmon steaks OR filets
- salt and ground black pepper
- 1/4 cup orange juice
- 1 Tbsp. brown sugar
- 1/2 Tbsp. Dijon mustard
- 1/4 cup fresh cranberries
Directions
- Heat a skillet over medium-high heat and coat with olive oil spray. Add the salmon steaks and cook 4 minutes. Turn and cook 4 minutes for a 1-inch thick steak. Cook 3 minutes per side for a 3/4-inch steak. If using salmon filets instead of salmon steaks, cook about 8 minutes for a 1-inch thick filet. Remove to a plate. Add salt and pepper to taste.
- Pour orange juice into skillet and scrape up any brown bits on the bottom. Add the brown sugar, mustard and cranberries. Stir to dissolve sugar and simmer 3 to 4 minutes. The cranberries will burst. Mash then with a spoon and stir to make a thick sauce.
- Spoon some sauce on a plate and place the cooked salmon on top. Spoon the remaining sauce over the salmon.
