Ingredients
- 1/3 cup dry white wine
- 1 Tbsp. white wine vinegar
- 2 shallots, minced
- 1 cup mayonnaise
- 2 Tbsp. chopped fresh tarragon
- 1 tsp. grated lemon rind
- 1/8 tsp. pepper
- Garnish: fresh tarragon sprig
Directions
- cook first 3 ingredients over medium-high heat 5 minutes or until liquid is reduced to 1 Tbsp. Remove from heat, and cool.
- Stir together mayonnaise and next 3 ingredients; stir in wine reduction. Cover and chill up to 7 days. Garnish, if desired.

Tomato-Basil Mayonnaise:
- Stir together 1 cup mayonnaise, 2 Tbsp. tomato paste, and 2 Tbsp. chopped fresh basil until blended.

Gremolata Mayonnaise:
- Stir together 1 cup mayonnaise, 2 Tbsp. chopped fresh parsley, 2 Tbsp. grated lemon rind, and 1 garlic clove, pressed.
