Italian Sausage and Lentil Stew

Ingredients

  • Vegetable cooking spray
  • 1 lb Italian sausage, cut into 1-inch pieces
  • 2 large carrots, sliced
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 3 1/2 cups Swanson Vegetable broth
  • 2 tsp dried oregano leaves, crushed
  • 1 bay leaf
  • 2 cups cubed red potatoes
  • 1/2 cup dried lentils
  • 2 cups coarsely chopped broccoli rabe

Directions

  1. Spray a 6-qt saucepot with cooking spray and heat over medium-high heat for 1 minute. Add the sausage and cook until it’s well browned, stirring frequently to break up meat. Pour off any fat.

  2. Add the carrots, onion and garlic and cook until tender.

  3. Stir the broth, oregano, bay leaf, potatoes, and lentils into the saucepot. Heat to a boil. Reduce heat to low. Cover and cook 40 minutes or until the lentils are tender.

  4. Stir in the broccoli rabe. Cook for 5 minutes more or until tender. Remove the bay leaf.
