Wild Mushroom Chicken Balsamico

Ingredients

  • 3 tsp olive oil
  • 4 chicken breasts
  • 12 oz assorted wild mushrooms, sliced
  • 1 medium zucchini, sliced
  • 1 medium onion, cut into wedges
  • 2 garlic cloves, minced
  • 2 cups Prego Marinara Italian
  • 1/4 cup balsamic vinegar
  • black pepper

Directions

  1. Heat 1 tsp of the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until browned on both sides. Remove the chicken and set aside.

  2. Reduce heat to medium and add remaining oil. Add the mushrooms, zucchini and onion. Cook and stir until tender. Add the garlic and cook for 1 minute.

  3. Stir the marinara and vinegar into the skillet. Heat to a boil. Return the chicken to the skillet and reduce heat to low. Cover and cook for 10 minutes or until chicken is cooked through. Serve with black pepper.
