Toasted Couscous with Spinach Leaves

Ingredients

  • 1 1/2 tbsp butter
  • 1 1/2 cups dry couscous
  • 2 cups cold water
  • 2 cups fresh spinach
  • 1 tsp coarse salt
  • 1/4 tsp black pepper

Directions

  1. Melt the butter in a large, stainless steel saucepan. Add the couscous and toast over medium heat, about 8 minutes, until golden brown.

  2. Remove pan from heat and pour 2 cups water over the toasted couscous. Quickly layer the spinach leaves on top. Cover the pan with two layers of plastic wrap.

  3. Steam for 5 minutes, then remove plastic wrap and season couscous with salt and pepper to taste.
