Durban-Style Flank Steak and Marinade

Ingredients

  • 1/2 cup Worcestershire
  • 1/2 cup soy sauce
  • 1/2 cup balsamic vinegar
  • 1/2 cup malt vinegar
  • 1/2 cup safflower oil
  • 1/4 cup minced ginger
  • 1/4 cup minced garlic
  • 1/4 cup sugar
  • 4 tbsp ground cardamom
  • 3 tbsp ground coriander
  • 3 tbsp ground turmeric
  • 3 tbsp dried thyme
  • 3 tbsp crushed red pepper
  • 1 flank steak (3-5lbs)

Directions

  1. In a large bowl, mix Worcestershire, soy sauce, balsamic vinegar, malt vinegar and safflower oil.

  2. Whisk in ginger, garlic, sugar, cardamom, coriander, turmeric, thyme and red pepper.

  3. Add flank steak and marinate for 24 hrs.

  4. Over medium-high heat, sear the flank steak until the meat easily releases from grill. Turn and sear the other side. Cook for 10-12 minutes, or until desired doneness. Remove from heat and let stand for 5 minutes.

  5. Slice thinly across grain of meat. Serve.
