Filet of Chateaubrand

Ingredients

  • 1 lb beef tenderloin
  • 2 Yukon Gold potatoes, peeled and quartered
  • 1/2 cup heavy cream, warmed
  • salt and pepper
  • 1/2 cup wild mushrooms
  • 2 tbsp butter
  • 1 cup fresh green beans
  • 1/4 cup chopped Roma tomatoes
  • 1 tsp chopped marjoram
  • 2 tbsp olive oil
  • Merlot Demi-Glace (see recipe)

Directions

  1. eheat oven to 350.

  2. Trim meat of all visible fat. Save trimmings for sauce.

  3. Please potatoes into pot of cold, salted water. Bring to a boil and cook until fork-tender; drain, leaving potatoes in pot. Use a fork to smash the potatoes while adding warm cream, salt and pepper.

  4. In a separate pan, saute mushrooms in 1 tbsp of butter and mix in with mashed potatoes.

  5. Cook green beans in salted, boiling water for 3 minutes, then cool under running water. Pat dry. Saute briefly in remaining tbsp of butter with tomatoes and marjoram.

  6. Season tenderloin with salt and pepper and brush with olive oil. Sear outside of meat on a hot grill. Please in oven and cook until reach desired doneness.

  7. To serve, carve tenderloin into slices and place on bed of mushrooms and mashed potatoes. Drizzle with Merlot Demi-Glace. Garnish with vegetables.
