Merlot Demi-Glace

Ingredients

  • 3 tbsp chopped shallots
  • 1 sprig thyme
  • 1 tbsp olive oil
  • 1/2 cup Merlot wine
  • 3 cups beef stock
  • Beef trimmings (from tenderloin)

Directions

  1. In a 1-qt saucepan over medium heat, cook chopped shallot and thyme in olive oil, 4 minutes, until shallots are clear. Add Merlot and simmer, 6-8 minutes, until liquid is reduced to a thick sauce.

  2. In the same pot, add beef stock and beef trimmings and simmer for 35-45 minutes, until sauce coats the back of a spoon.

  3. Strain through sieve and season with salt and pepper.
