Ingredients
- 3 tbsp chopped shallots
- 1 sprig thyme
- 1 tbsp olive oil
- 1/2 cup Merlot wine
- 3 cups beef stock
- Beef trimmings (from tenderloin)
Directions

In a 1-qt saucepan over medium heat, cook chopped shallot and thyme in olive oil, 4 minutes, until shallots are clear. Add Merlot and simmer, 6-8 minutes, until liquid is reduced to a thick sauce.

In the same pot, add beef stock and beef trimmings and simmer for 35-45 minutes, until sauce coats the back of a spoon.

Strain through sieve and season with salt and pepper.
