Ingredients
- 1 qt water
- 1 lb carrots, peeled and chopped
- 8 oz parsnips, peeled and chopped
- 8 oz potatoes, peeled and chopped
- 4 oz onion, peeled and chopped
- salt and pepper
Directions

Combine all ingredients in a stockpot, bring to a boil and reduce to a simmer, stirring now and then until the vegetables begin to break down. After about 1 hour, soup should have the consistency or porridge.
