Ingredients
- 1/4 cup ground coffee
- 1/4 cup black pepper
- 2 tbsp salt
- 1/4 cup brown sugar
- 4- 6oz rib eye steaks
- 1 tbsp olive oil
- 2/3 cup water

Combine coffee, pepper, salt and brown sugar. Rub steaks with half the mixture and marinate 30 minutes, keeping the rest of the dry rub in a tightly sealed jar in the fridge.

When ready to cook, heat a cast-iron skillet, large enough to hold all the steaks without crowding, until extremely hot.

Film the pan with olive oil; then place steaks in and immediately turn down heat. For medium steaks, flip over once the color along the sides of the meat changes halfway up; then continue cooking on the other side for a somewhat shorter period of time.

When done to your liking, remove steaks to a platter. Let stand for a few minutes before serving.

Add 2/3 cup water to the pan you cooked the steaks in and bring to a boil. With a wooden spoon, scrape up any bits stuck to the bottom of the pan. Reduce by boiling down to half. Adjust for salt. Pour sauce over steaks and serve.
